Ingredients

  • 1 pound of penne pasta
  • 1 teaspoon of black pepper
  • 450g of fresh Shish Tawook – a type chicken found in meat section of any grocery store
  • 1 ¼ cup of heavy cream
  • 3 ¼ cup of full fat milk
  • 2 ½ teaspoon of unsalted butter
  • 2 tablespoons of vegetable oil
  • 3 minced garlic cloves (pieces)
  • 2 small finely chopped onions
  • 1 teaspoon of dried oregano (optional)
  • 350g of parmesan cheese
  • 4 teaspoons of tomato paste
  • Salt
  • Black Pepper

Preparation

Step 1

In a shallow pan, boil enough water to cover the pasta and add generous amount of salt. Add the pasta and cook for 10 minutes (depending on the cooking instructions written on the pasta package you bought). When the pasta is fully cooked, drain and set it aside.

Step 2

Over medium heat, add the butter and vegetable oil to a sauce pan. Then add the onions and cook until they slightly change color to light yellow. Add the minced garlic and cook for 30 seconds.

Step 3

Add milk, heavy cream, tomato paste, dried oregano, and black pepper and stir until well-combined. Add salt according to your preference, then cook until the sauce thickens.

Step 4

In a separate bowl, season the shish tawook (chicken) with salt and black pepper. Then over high heat, add one tablespoon of vegetable oil. Cook until the chicken is golden brown or to your preference.

Step 5

Now add the cooked pasta to the sauce and stir until the pasta is fully coated. Then add the cooked chicken as well as parmesan cheese and cook until the cheese is melted.

Step 6

Transfer to a serving dish and serve.
